Looking for a good pumpkin bread recipe? I just ADORE this recipe:
Pumpkin Bread/Cake
It's delicious on it's own, or you could bake it as a cake and add a lovely cream cheese frosting to it. Mmmmm......
I have recipes on the main site because I think they're wonderful homeschooling "tools". A recipe is great for several things - math, logic, learning to follow instructions, etc.
One thing you definitely don't want to do with this recipe is make it in a small pan. It needs to spread out in a large pan, not something like a loaf pan. Otherwise, it stays gooey and not-done in the middle, and that's just yucky. LOL
I often make this in my largest cake pan (15 inches, maybe? I don't remember, I just know it's really big - it's the biggest of a 4 pan Wilton set.) and then you can cut lots of pieces that are just right for individual servings. It's moist and oh so yummy! I haven't tried it with a frosting on it yet, but I'm thinking it would be really good. This would probably be too dense to do a layer cake - I would probably make a sheet cake or large single layer and just frost that.
