Works For Me Wednesday


It's Wednesday! It's also my birthday, so I'll give you a birthday cake hint today.

Have you ever seen cakes decorated with fondant? It's that smooth white stuff that covers an entire cake and makes it look so pretty and smooth, just like all cake decorators want. Unfortunately, it also tastes icky. BLECH. Hardly anyone actually eats more than a couple bites of the stuff! I stumbled across a recipe for a much better version of it that not only looks beautiful, but you can actually consume without "icky face".

Marshmallow fondant
1 cup mini marshmallows
1 tbsp water
1 1/2- 1 3/4 cup powder sugar

Pack the cup with the marshmallows, kind of like you would brown sugar. Place them in a microwave safe bowl. Add the water. If you want this fondant to be colored, one way to color it is to go ahead and add some color to the measuring spoon before adding the water. Now, microwave for about 20 seconds, until they all puff up and start to get runny. Remove from the microwave, and stir well until everything is all melted and run together. Pour the sugar into the bowl (start with the smallest amount, add more later if needed) and mix well. Once it gets to the point it's too thick to stir, take it out and knead by hand until it's totally smooth and ready to work. A little oil or shortening on your hands will help keep it from sticking to you too badly. When it's all kneaded, add a little oil or shortening to your work surface, then lay it out, roll it really, really thin, then roll it around your rolling pin to lift, put it on your cake, smooth, trim, etc. (Make sure you have a crumb coat of icing on the cake before adding the fondant.) You can also add color to the fondant after it is fully made by adding color to a portion of it and kneading.

This fondant comes out SO pretty, and while it is super sweet, at least it doesn't taste yucky. Enjoy!
